A balsamic vinegar of the lombardy plan

In the present paper a sample of balsamic vinegar produced in conformity with the old techniques of the traditional balsamic vinegar of Modena, but outside the typical zone of production. was examined for evaluating its chemical properties. This product is similar to the traditional balsamic vinegar of Modena, but the different climatic conditions of the area of production play an important part inthe process
